Seeing dead animals (possible trigger warning)
Earlier today, when I was driving back home from therapy, I saw multiple dead rabbits on the side of the road. It's been about 2 hours since and I can't stop thinking about it. I see roadkill pretty often, but the remains don't really look like much anymore, just flat. These rabbit were completely intact as far as I could see and just laying right next to the road. Because of that I'm worried there's someone going around killing them for no reason.
I can't really tell if I'm sad or angry or something else, just know that I normally don't get this upset about it

Well, I'm glad you labeled your post with possible trigger warning. My response carries the same POSSIBLE TRIGGER WARNING. But in an effort to help out, I will tell you what I know. 
For everything there is a "season" for different animals. Rabbits, deer, birds, squirrel etc. and this is a time when they seem to be more prolific in ones area. You see more of them because it is "their time". It seems as if many times you have seen what can be termed as "road kill" on your traveled path prior. They may have been as you say "flat" prior because other drivers have run over them, over and over and again. Or, the elements have had their way with them.
Perhaps today, the ones that you saw, started to run across the road, into an incoming car, and bounced off of the car onto the side of the road. The elements/heat and the passage of time have not quite happened yet. And the animal is not completely deflated for lack of a better word.
I once awoke one morning to find a decapitated rabbit on my front lawn with some of its feet missing. Imagine my horror. Luckily for me, I have a neighborhood website, where we all keep one another informed and ask questions.
There was a simple explanation for it. There is a particular type of hawk in our area that eat rabbits. But the body of the rabbit is too heavy to carry away in flight with the rabbit intact. It removes the head, flys away with it and sometimes comes back for the feet which are the lightest parts to carry.

I'm aware that most of the animals are flat cause they got run over many times, I mentioned it to try and explain why the rabbits I saw today upset me more.
I was also thinking it could've been a predator, cause I do think I've seen big birds circling in the air before. It still felt weird though, cause the rabbits seemed pretty big, size of a medium sized dog I would say, and completely intact. Now that I'm trying to remember more details, I do remember they had blood around their mouths. So I guess they could've had internal bleeding from being hit by a car.
Anyway, I guess it doesn't do much good to worry so much, I just get curious and when I think about what possibly could've happened I get worried. By that time it's really hard to drop it and think of something else

Well, so, now some of the hows or the whys have been addressed. But still, who knows?
At the end of the day, what is important is your feelings in regard to it.
Things like this would be unsettling to anyone. I imagine it appeared more graphic today. And this moved you. It upset you.
I also hear you saying that you were coming home from a trip to your therapist. Perhaps you and your therapist, dug down deep today, uncovered some things in you? Things that are still open and exposed? Things that are raw? Even if all of this happened on a subconscious level. Kind of like your skin. If someone touches you, it may be fine. If someone touches you after a sun burn, well, it's not so fine.
