I could use some guidelines, as long as I don't have to eat broccoli, brussels sprouts, and such.

There is wide list of yummy veggies loving them roasted especially or here a Jiggs Dinner root veggies boiled up served with turkey and gravy.

As a child I hated them. Brussels sprouts were the worse. They were squishy, nasty balls of cabbage.
As an Adult, I had learned that actually they were severally over cooked!
My spouse cooks them for me with the broiler, lightly dusted with garlic and drizzle of EVOO. now they are very light and mildly crispy. Can also crumble some bacon with it before going into the broiler and well what doesn't taste good with bacon :)

But then some things from then to now hasn't changed like Lima beans. Still can't eat them.
NOW, if I were to come to your house and you cooked them and served them to me. I would eat them without complaint. It was how I was raised, someone took the time to cook it. The least you could do is eat it.

I like codfish and salmon only and I live in a province that lobster 🦞 crab 🦀 etc are very common but I don’t enjoy them. You can walk along a beach and grab a crab for supper even. So those that don’t live here think I am crazy lol 😂 it is what it is … lol 😂

I too live in a region that is HIGH with various crustacean and fish. And only maybe (like you) two three of them I actually enjoy.
Lobster, have had it many many times. It would NOT bother me if I never had it again LOL.
