How are you all doing? A lot of us are now being told if we haven't already to eat healthier from our doctors. What are some good healthy foods that you are eating? Maybe you have a good recipe for this food or link and others can try this food out also.

I would REALLY appreciate ideas or recipes to increase veggie consumption. I eat too few veggies because I don't care for them. There are many I haven't tried because I grew up on corn, beans, broccoli and iceberg lettuce, and I don't know how to pick them or make them. I have purchased books, but just never seem to step out of the frozen corn comfort zone.
@carefreeHeart57 I find the key to eating veggies is to cook enough so I get multiple meals from them. The easiest is fresh broccoli crowns. I put a hald inch of water in a pan and get it boiling then put in the broccoli crowns and cover the pot and cook 5 minutes once start boiling again. Turn down heat to medium to medium high. Test for a little softness and if cooked enough then drain and put on cooling rack or wooden block. let cool before refrigerating. If you have more than you can eat in 3-4 days then put some in refrigerator and some more in freezer in container or bag.
I like raw carrots for a snack. Peel carrots and cut to convenient size or buy baby prepeeled carrots. Store in refrigerator in jar covered with water.
Another stir fry is a good option for all in one pan cooking. Dice peeled (sweet if available) onion, slice off slivers of cabbage and if you have a grater, grate a carrot or two. Coat bottom of pan and saute onions 5 minutes. Cook on low to heat 10-15 minutes. Turn every couple minutes. Okay to cover for more cooked veggies.
Remove veggies from pan and let cool. Refrigerate.
You can also scramble eggs and add to veggies with a little soy sauce and garlic and ginger to taste. Do not add much until you taste it. Other spices like cayenne can add a little zip if you like the spicy dishes.

Thank you! The stir fry sounds really yummy, and I hadn't thought of that recently. That could be a real winner! Adding veggies to scrambled eggs is another great suggestion. I eat eggs for dinner because it is fast after work, but a little pre-cut green pepper and onion might make it fancy and healthier!

What I do for veggies is we grow we vacuum pack them for use year round into bags that are available for use for one meal.
Corn we take it off the cob before freezing with a peeler and I put it in a pan with just a little bit of water like 1/4 of a cup so it doesn't burn on the bottom after it defrost. For the carrots we cut them up with a slicer and then put a little bit of brown suger and cinnamon and it taste really good. For green beans we put some cheese on it and melt it while warming it up on the stove. For peas, we just cook them in water.

Wow! It must be wonderful to have fresh home grown corn year round. My idea of corn is Green Giant from the freezer section! I ventured into freezing some raspberries earlier this year when they were on sale dirt cheap and looked amazing. A little more organization in my life could really help out!

Yes, having fresh veggies that we grow is amazing however, last year we didn't plant enough veggies so we did buy a lot of frozen veggies. The frozen mixture I like is the carrots and peas mixture and we enjoyed that a lot. Not sure if you have bought that before but you might try it.
I think it would be a worthy conversation when a person has been diagnosed with an incurable serious mental health illness, yet they have acquired enough safe copying skills that they rarely fall into the categories of crisis. In many cases the book has not been written for people who have acomplished this, yet at any moment they can relapse, and precticing safe copying skills does not mean they do not live with a serious mental illness. Your thoughts on this?

"There are many successful people suffering from severe mental illnesses totally unknown to other people. They never announce themselves to others" I think the more we talk about what is wrong the more we focus everyone's attention on that rather than the incredible qualities we all possess though may find challenging to express.
I like🥦🥦🥕🥕with Cauliflower and melted cheese, I buy it all in one bag and put a 1/2 cup of water in a pot and let it cook real slow until tender.
