Bolivia, the flavours of South America, for someone like me, who is bland, this should be fun 😂💚
Api morado is a warm, sweet beverage from the Andean regions of Bolivia, particularly associated with the highland cities where cold mornings make a hot, comforting drink part of daily life. The preparation begins by soaking and boiling ground purple corn in water until it thickens into a smooth, velvety base.
Sugar is added for sweetness, and the liquid is flavored with spices such as cinnamon and cloves, which infuse it with a fragrant depth. Some versions incorporate orange or lemon peel and pineapple to add brightness and balance the richness of the corn.
The drink is stirred continuously during cooking to prevent lumps and to develop its signature creamy texture. Api morado is typically served hot, often for breakfast or as a mid-morning snack, and it is almost always accompanied by pastries like buñuelos or empanadas, whose crispness contrasts with the silky drink.
