Olla de Carne
When the rainy season beckons, Olla de Carne emerges as a comforting remedy. This traditional beef stew melds tender chunks of beef with an assortment of vegetables—yucca, potatoes, corn, carrots, and plantains—creating a nourishing pot of flavors savored during leisurely weekend gatherings. It was my host mom’s specialty meal during the rainy days in July. The enticing aroma would fill the air, making my mouth water all day. The beef would fall off the bone, and I particularly enjoyed the yucca, which soaked up all the flavors, becoming a delicious companion to the stew.

El Flamenquín Cordobés es un plato tradicional de Córdoba, España. Consiste en finas lonchas de jamón curado (normalmente serrano) envueltas en lonchas de lomo de cerdo , que luego se rebozan en pan rallado y se fríen hasta que quedan doradas y crujientes. Flamenquín Cordobés is a traditional dish from Cordoba, Spain. It consists of thin slices of cured ham (usually Serrano) wrapped in slices of pork loin, which are then coated in breadcrumbs and fried until golden brown and crispy. It is usually served hot, often accompanied by chips, salad or a slice of lemon. The outside is crispy, while the inside is tender and flavorful, with the flavorful ham and juicy pork in perfect harmony. And there are many more delicious dishes like this, both from the city and the country.
