What do you do if someone tends to have a way with words?

I'll try to make a long story short.

My mum has a way with words. She often unintentionally express her opinions in a way that puts me down. Or she'd always find on the negative things about my decisions and sends a message to me that basically says "you'll fail or it won't work out".

I was planning a coffee date with her tomorrow, Friday. To update her on the changes with work in the next two years, and my plans for next year. For the past month, I have been visiting the public library in the mornings before my shift starting at 12pm. Taking notes on writing Cover Letters and Resumes. As of yesterday, I've finally finished proofreading, editing, and perfecting both. They both are now one page long. It took a few days to tweak the Cover Letter to make it fit on one page, but I did it. So, there is this company I want to apply to, in China, to teach English. It's an Entertainment Company that was established in Oct. 2020. Although there had been no job posting, I still want to give it a try and offer them to hire an English Teacher. 

Here's the problem, I'm now wondering if I should let my mum know during our coffee date. My parents are against the political party in China, and would mostly likely talk me out of it. Even if the chances are low in actually having the company hire me, I will still send them the Cover Letter and Resume. It has been my dream career goal since 2021 to be able to work overseas, teaching English. I don't want to give up my dream, and because of the changes that I found out that will be happening in my current work in the next 2 years. I've finally decided to push ahead and actually prepare to send it out early next year and hope for the best. 

Maybe I'll tell my mum about it after? If I do get hired, then, I'll let her know? I don't want her words to make me feel depressed about my decisions now. But when I tell her the changes that will happen at my current work, she would definitely ask me what my plans for the future is. Or maybe I could tell her my Plan B instead. 

She wants to move the coffee date to later this afternoon, Thursday. Rather than tomorrow, because I said I wanted to have lunch with them tomorrow after my dental appointment. So, she's like, "I have no plans this afternoon, maybe we can have our conversation later today instead, then have lunch together tomorrow after your appointment."

So the question is, should I tell her my plan with applying to an Entertainment Company in China or not tell her until I'm actually hired?
