If you was eating 1meal a day it's normal that you body and brain got used to not eat, if we try to eat 3meals a day plus 3snacks a day (even small portions) every 3h then body should go back on track. I don't know how important is goal for someone, but if yes for you i think it's good to tell it yourself when eating a meal, maybe also some reminders/notifications on the phone to not forget to eat, maybe at the beginning some easy digestive food so it will be less uncomfortable on stomach
Amazing work for coming on this platform and really reaching out for help. Have you considered entering a treatment program? It will help with the mental recovery and can make getting back to a healthy place a lot easier. For weight gain, I would definitely recommend finding one actual food or snack that you really like. Maybe something like dates, peanut butter, granola bowls/bars, ice cream. Genuinely, whenever you get a free chance, just eat and with time your hunger signals will come back.
