Breaking this down into sections I think I can answer first and third part, taking a stab at it I've come up with spider.

A man is in court for killing his wife. In the closing statements the mans lawyer surprises everyone when he announces "His wife was just missing. Everyone look at those doors. His wife is going to walk in those doors in about thirty seconds. " The entire court is silent and the jury stare at the door as the lawyer and defendant stare at them. After a couple of minutes the lawyer says "See! If you were so sure her killed his wife, you wouldn't be watching the door!. The jury goes into deliberation and comes back almost immediately with a guilty verdict. Why did the jury convict him?
@lazyKatz Is it as simple as "he killed his wife?" Sounds counter intuitive....

Riddles always make me question if the answer that comes up in my mind is too obvious. But is it just because he didn't stare at the door (only the jury did) and therefore he knew his wife was never going to come through those doors? And the only way he could actually know that she wasn't going to come through is if he actually killed her?
You are in a jungle and you come across a lion and a jaguar.
You have a gun but there is only one bullet left. Which one do you shoot?

haha very good guess, but if you know the real answer you will understand why that doesn't work ;) and besides, it's still quite a big gamble that way.
Could the answer be shoot the jaguar! Lions don't live in the jungle.

That's a very clever answer, but not the one I am looking for.
My answer is a little bit farfetched though, but I'll give a pretty big hint: 'either the lion or jaguar is not an animal'.
Could the jaguar be a four wheel variety

As a Lion is a chocolate bar in the UK i was going to eat that and then drive away in the Jag :)
