Quick Curry Vege

mixed vegetables for 2 persons (eg. 1 onion, 1 sliced carrot, a few broccoli pieces, some cut up cabbage, some mushrooms, preferably portobello bec they add a strong taste), you can take basically any vege you like, make sure you get different textures

in a blender mix one 1 inch piece grated ginger, 1 tb curry powder, 1 tb coconut flour (i take the one reduced in saturated fats), 1 cube of vegetable stock (optional), 1/2 l water/almond milk mix or any milk you like. You can also add more liquid if desired and of course hot sauce and fresh cilantro.

Fry vegetable and add sauce, cook for a few minutes and enjoy. If it does not thicken enough add 1 tsp tapioca flour (learned that from soulsings, works perfectly)

Is this very spicy? I can't take spicy at all but I love the way curry smell.

Hi there, if you do not like spicy don't use so much ginger and neither hot sauce and less curry powder. You can also leave out the fresh ginger, which adds to "heat".

Milk always reduces spicy heat.

Curries are usually more on the spicy side.
