Homemade Chicken Nuggets with Honey Mustard Sauce!

This is a simple one I haven't made yet, but looks great, especially the crunchy celery component!

Ingredients for nuggets: 1 chicken breast (250g) - celery (50g) - 1 egg - bread or panko crumbs - 3 tbsp water - plain flour - S&P

Ingredients for sauce: 4 tbsp mayo - 1 tbsp honey - mustard - 1 tsp lemon juice (just whisk it up and that's it)

Finely mince chix breast (tip: thinly slice breast, then mince by letting the weight of the knife drop onto the meat, avoiding putting too much pressure on the knife). Quarter celery and cut into 6-8mm pieces. Separate egg white from yolk. Add egg white to chicken, mix well. Season with S&P. Add celery. Make batter using egg yolk, water, flour, mix until thick. Using a spoon or ice cream scoop, make small nuggets, drench in batter, then coat in crumbs. Deep fry in oil 180-200 C for 2-3 minutes until crispy.

Sounds super simple, but if you don't want to buy store-bought nuggets and want to control what you put in your food, this looks awesome! You can sub onion for the celery, but the crunchiness of the celery and that cooked-celery aroma is recommended and a nice touch to a plain nugget. As with anything, there are all sorts of alterations one can make.; you could even add sake, like in the chicken karaage recipes (Japanese fried chicken, better than any KFC!).

Kitty that sounds yummy, I can try it with soja granules! the sauce can go with lots of other things too, never tried majo, mustard and honey. I let you know how it went - something for old year's nightlaugh

@amiablePeace77 Haha, "Old Year's Night," love it. You could also add flax seeds or chia seeds to the panko or breadcrumbs or something like that to make it extra crunchy and extra healthy; I add that to things a lot, or shake in a little bit of this stuff I found, it's the mix you sprinkle on "Everything Bagels" so i like that too! It's called "Everything but the Bagel Seasoning Blend" with sesame, sea salt, garlic, onion, and poppy seeds. I'm licking some off my hand right now hee hee.

hahaha, I can see you licking it off your hands laugh. The seasoning sounds delicious, I am a fan of garlic! I also use flax and chia seeds to get the omega 3 fatty acids which are so healthy.

@amiablePeace77 I add flax and chia seeds to my white sticky rice for the fiber, and I put chia seeds in my water and they plump up and are fun to drink! Very nutritious with omega 3 and fiber too!

that's a great idea to make white rice healthier laugh. Chia and flax seeds can be used for many things (even thickening soups)

BAKED WHITE BEAN + KALE + ARTICHOKE DIP (prep time 5 mins - bake time 30 mins)

This one was a real hit with my mom when I made it for a picnic! You can prep this and store in fridge overnight and bake before serving.

Ingredients: Butter & EVOO - 1 bunch kale, chopped - 1 16oz can white beans - 1 or 2 13oz cans artichoke (drained and chopped) - 2-4 garlic cloves - 1/2c mayonnaise - 1c grated white cheddar - freshly ground S&P

Instructions: Preheat oven to 350F and butter a 6x10" baking dish. In a 12" skillet, heat olive oil over medium heat. Add kale (tough ribs and stems removed) and a pinch of S&P. Saute until it wilts, about 2 mins. Transfer to a bowl, set aside. Now puree beans, mayo and garlic until smooth. Mix that w/ the artichokes, kale, grated cheddar, and S&P to taste. Spread the mixture into the prepared bakig dish and bake 30 mins (if you want a browned top, place the dish under the broiler an extra 3-5 mins).

Serve w/ warm pita, toast points, or chips/crackers. Or, even veggies or meats! Or just stick your face in the dish w/ your mouth open! Itadakimasu! Love, Kitty 🐱‍🏍

SPICY SALMON ROLL (CAN USE TUNA FOR THIS TOO)

Servings: 3 rolls

Difficulty: easy

INGREDIENTS

3 oz. salmon, cut into small chunks

1 Tbsp. mayonnaise

1/2 tsp. Sriracha Chili Sauce

cucumber, cut in long thin strips

avocado, cut in long thin strips

2 1/4 cup rice

3 seaweed sheets

DIRECTIONS

STEP 1: To make the spicy sauce, mix the mayo and chili sauce together. Fold in the salmon chunks.

STEP 2: Using a spoon, quickly spread a thin layer of rice onto seaweed sheet. Leave a bit of clearance on all sides, as shown. Put strips of salmon, cucumber and avocado on top of rice an inch above bottom of sheet.

STEP 3: Roll bamboo to cover ingredients with seaweed, squeezing bamboo tightly with hands. Unroll bamboo, and continue rolling seaweed tightly until all the rice has been covered.

STEP 4: Place rolls seam side down on cutting board. Wait for them to cool for a couple minutes, then cut pieces with a sharp knife.

Nice, @essdee, now all you have to do is tell us how to roll the roll so it doesnt fall apart and look like a hot mess! haha. I make a tuna one (its not pretty, but tasty) almost the same, but with mango and cilantro too. Yum! Do you find you have to put some mirin on the rice so it doesn't stick to your fingers?

Ok I made this earlier this week and it was soooo good. Use panko crumbs until deep golden brown and plenty of celery! And don't make the nuggets too big! <3
