hello potential stranger, welcome to my nook. this will be the start of an on-going series filled with self-care a day. if you're reading this, why not subscribe :D maybe we can go through this together, maybe you can follow along what i've already tried and see how it works for you. either way, welcome <3

d a y #1 | baking:

i bought peanut butter yesterday. i'd read somewhere that peanut butter gives you healthy weight gain. weight gain? i'd said to myself, this is such a good opportunity. and i'd swiped it off the shelf and checked it out at the counter without pausing to consider if i would like the taste or not.

turns out, i didn't. it had a distinct scent, laced with nuts. although i loved peanuts, the smell made me nauseous. oh god, i muttered to myself, pacing in my tiled kitchen, there's no way i can eat this whole jar. but, determined to shove it inside me somehow, i resorted to surfing the internet. "recipes with peanut butter" i typed frantically. i scrolled past pies, pastas (pastas??) & finally, cookies. grinning, i took out a notepad and put my apron on. so without further ado, let the cookie trials begin.

i n g r e d i e n t s:

all purpose flour: 2 1/4 cups
baking soda: 3/4 teaspoon
peanut butter: 1 1/2 cups
unsalted butter: 1 cup (226 g)
white sugar: 2/3 cup
light brown sugar: 3/4 cup
salt: 1/2 teaspoon
vanilla extract: 2 teaspoon
eggs: 2 large ones
chocolate chips: 1 1/2 cups
sea salt (for sprinkling)

m e t h o d:


1. pre-heart oven to 176 degree celsius. if you've got it in farenheit, then that's 348.8 F.
2. in a large bowl, sieve the flour & baking soda.
3.
in a separate bowl (or use a whisking machine), add room temperature butter (it's really important it's all soft and squishy before you add it in). whisk for 2-3 minutes until fluffy peaks form. add in peanut butter & whisk for another minute.
4. sieve the sugars in, taking care to use a spatula instead to gently fold it in.
5. add in one egg at a time into the butter mix, whisk in. add the salt, vanilla essence & salt and beat for one minute.
6. add the flour & baking soda mix into the butter. make sure to use the spatula now, it's important to carefully fold in until incorporated fully. stir in chocolate chips.

7. this is really important, but place the mix into the fridge. for 30 minutes at least. 2 hours at the max. you can actually store this for about a week.
8. prepare a tray with baking sheet and drop teaspoons of mix into the tray. arrange widely. bake for 10-15 minutes and make sure you take it out. i personally prefer 10 minutes only. although they may look golden and floppy, they will harden over time.


makes a delicious batch of 24 cookies (usually, sometimes it's more u-u sometimes it's less, depending on the size)

@Sunisshiningandsoareyou gasp you're always everywhere, do you lurk in the forums u-u replying to everyone, making everyone feel noticed & appreciated. you're very cool thank you for taking the time to read <3 aaand thank you :D i love writing. although i want people who're a little bit like me, lazy but still wanting to do better, to see this and have encouragement, i didn't really want to tag anyone. i wanted it to be a lil gem for people to find at their own pace.

of course, throwing some cookies across the globe wink, although they might be crumbly when they arrive u-u <3

you must try it at some point, it's a lovely addition to cookies

hi stalkers <3 we meet again, new day, new post evil laugh. today's one is another cooking entry, mostly because that's what i usually only have time to do u-u these days, but i promise something different will arrive soon.

d a y #2 | cooking:

if you know me, you know i love fries. nothing beats crispy, crinkly cut fries fresh from the (uh, oil? that's not very healthy is it hm) but yes :D. i've always been at the mercy of mcdonalds for my fries, i never really could get the right consistency for the ones at home. and you know what, one day i was like, i'm not gonna let this be my one weakness, what if one day there's a zombie apocalypse and i'm unable to survive because i don't know how to make fries.

as you can see, i had great motivation.

i n g r e d i e n t s:

• lemon juice— 2 tbsp
russet potatoes— three large
• salt to taste :D

m e t h o d:

1. in cold water, add one tablespoon of lemon juice
2. place a potato horizontally onto the cutting board. using a large knife, cut vertical sections of the potato. this will make thick potato slices. now separately slice each of them until medium long wedges are made.
3. yeet the slices into the water & chill thirty minutes. strain & then pat dry with a paper towel.
4. fry for 6 minutes in hot oil & then take out, rest for 15 minutes & then fry again for 2 minutes.

makes pretty nice fries yum, you can add cheese & sprinkle some sauces on w chicken flakes & bam.

d a y #3 &4 | a letter to myself (and to you):

dear, dear ari,

i wish you would be kinder to yourself. i wish you would treat yourself like you would treat a dear friend. you say it on the daily, you reassure your friends, you whisper it to your siblings & you tell the moon. you tell them they're lovely & beautiful. their smiles could make flowers bloom. light up the room with it's sheer loveliness. do you tell yourself that? why is it so that when it comes to others, your words ripple and flow, creating the perfect thing to say. but when it comes to you, your silver tongue turns to lead, heavy & thick in your mouth. be kinder. do it. i know you never back down from a challenge. what have you really accomplished if you haven't made peace with yourself?

i know you do it on purpose, you know you're doing it, you know better. and that's why it's so much worse. throwing yourself into work to forget how you're feeling? not taking time to notice that your smile is starting to wobble at the edges? do better. i know you can do it.

you remember the little you? the little girl full of hopes and dreams, clenched in her fists as if she could protect them from the world. cherish them. enjoy them. fulfill them. you know you've gotta make her proud. smile at yourself in the mirror. you are extraordinary, and there is, and never will be, anyone like you.

today was a looooong day u-u our car's ac stopped working on top of it being incredibly hot outside so i was being fried in the car. ari fried chicken. anyway, a long cool drink made it all better. so here's the recipe :D

d a y #5 | oreo milkshakes:


i n g r e d i e n t s:

1 cup vanilla ice cream
2/3 cup milk
4 oreo cookies
1 tsp vanilla extract
• whipped cream for serving (optional)

m e t h o d:
• there is only one step hehe, blend it all together & add whipped cream on top

day #10 | red velvet cookies with cream cheese frosting:

i n g r e d i e n t s:

  • 3/4 cups butter softened
  • 1/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • red food coloring gel is best

    c r e a m cheese f r o s t i n g:
  • 2 tbsp butter softened
  • 4 oz cream cheese room temperature
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 1 pinch salt

    m e t h o d:
  • Preheat oven to 350°.
  • Cream together the butter, granulated sugar, and brown sugar.
  • Add the egg and vanilla. Mix until light in color and creamy.
  • Add in the dry ingredients (flour, cocoa, baking soda, and salt), mix into the dough. Mix until completely combined. The dough will be soft.
  • Mix in the red food coloring, about 1/8 tsp at a time until the dough has a brilliant red color.
  • Scoop or roll the cookie dough out into equal-sized balls. Arrange on a cookie sheet.
  • For smaller cookies, bake at 350° for 7-9 minutes or until the edges are starting to turn golden brown. For large cookies, use 1/4 cup of dough and bake for 12-15 minutes. Allow the cookies to cool completely on the pan.
  • Once the cookies are cool, make the cream cheese frosting.
  • Cream together the butter and cream cheese until fully incorporated. Scrape the sides of the bowl and slowly add in the powdered sugar, vanilla, and salt. You can adjust the texture of the frosting by adding more milk or more powdered sugar to your preference.
  • Frost the cooled cookies generously.

it's been a busy week. kinda exhausting as well. a couple of terrifying things occurred, but i made it like i always do B) i also got the second vaccination shot, they're right, it makes you feel so heavy.

so, nothing like some baking to cheer me up, right? evil laugh

day #20 (bc i said so, timeskip ok) | oreo cheesecake cookies:

i hope you have oreos on you otherwise this recipe ain't gonna work u-u

ingredients

for 12 cookies

  • 4 oz cream cheese(115 g), softened
  • 8 tablespoons salted butter, room temperature
  • ¾ cup sugar(150 g)
  • 1 cup flour(125 g)
  • 10 cookies, crushed

    preparation

  • In a mixing bowl blend, cream cheese, butter, and sugar until fully combined.
  • Add flour to the cream cheese mixture and continue to blend together until fully combined.
  • Add crushed cookies to the mixture and gently fold them together. Ensure the cheesecake batter is fully mixed.
  • Cover with plastic wrap and chill in the refrigerator for 30 minutes, or until batter is firm to touch.
  • Preheat oven to 350°F(180°C).
  • Roll batter into small balls and place on a parchment-lined baking sheet.
  • Using your fingers or a warm spoon press down on the dough balls to help form a cookie shape.
  • Bake for 12-15 minutes or until cookies turn golden brown on the bottom.
  • Place cookies on a cooling rack and rest for at least 5 minutes.

i'm not very good at this whole daily thing am i? sigh, i guess that's because i'm pushing myself to the limit, but also not? i don't know—i'm not sure of myself these days. everything is rocky.

hi lovely stalkers, it's me again :D. today has been a very busy day. my visa hasn't come yet so i'm stressed about that—only in the back of my mind though smh. anyway, i've spent the weekend playing valorant. i did some eye study as well, tried digital art for the first time, i've attached it below evil laugh.

Hey oreo! I actually tried out the peanut butter cookies a while ago but today I'm making them again 😛 I adjusted the recipe to make less (and by that I mean didn't accurately half the measurements) but they turned out great. ❤ I love this thread, the recipes are great. If you like chocolate, you should make chocolate truffles. My favourite recipe for them is just condensed milk, cocoa powder, crushed biscuits and melted chocolate. Yum! 😎
