In terms of establishing trust with a specific person and getting to the point of feeling comfortable chatting about what you want to talk about... I could see that being tricky. Because maybe even if you find the perfect person, you still wouldn't necessarily trust them from the moment you start talking to them.

Something I sometimes do personally if I'm not sure whether I trust someone is I'll start by sharing less vulnerable/sensitive things just to see if someone's able to handle it. And then if that goes well, I'll progressively work my way inwards to more vulnerable or tricky topics. Also works as a way of managing my own anxiety levels while chatting (i.e. don't start with the most overwhelming thing first).
