If someone says they are very pleased with the a letter

This is a very open question one which will have many opinions. I guess for me, the word sorry is just a word, if the person who has done wrong to me can explain their actions, and advise why they are sorry, it would be much easier for me to accept the apology and forgive them. I also think it very much depends on the wrong event in which you are saying sorry for!
