When I don’t know where to start, I usually google how to write that needed essay/paper(structure and etc.), then I read a couple of papers with similar theme. After I kind of get how to write the paper, I focus on finding information that will be needed and write down ideas.
The biggest step is starting to write. I hope I helped a little. Good luck!

I understand your problem, I too have always found it very difficult to write essays(
If I understood the topic well, then I wrote an essay as simple as possible: I did not add extra terms and definitions. Such works were graded by the teachers as excellent)
