Bursting with citrus, spice, and island flavor, Chicken Kelaguen is a traditional Chamorro dish from Guam that’s as bold as it is refreshing. Made with grilled chicken chopped and mixed with lemon juice, grated coconut, green onions, and chili, it’s often served cold with tortillas or rice.
The main ingredients in this dish are chicken, lemon juice, fresh coconut, green onions, and hot peppers. Each ingredient plays a crucial role in creating this flavorful dish.
The preparation process involves marinating cooked chicken in lemon juice until it fully absorbs all the flavors. Fresh grated coconut is added for texture, while green onions are used to add depth and freshness to the dish. Additionally, spicy peppers are included to give this tropical delight a touch of heat. This combination of fresh and flavorful ingredients creates a vibrant and delicious dish that captures the essence of the islands.
Throughout Micronesia, there are variations of chicken kelaguen that reflect regional preferences. Some regions prefer spicy kelaguen, while others opt for milder versions. In some areas, fish or shrimp replace chicken in the recipe.
