Finally a country I can comment on, deliberately going to be vague and just say an absolute delight, awesome mix of delicious and it can be as spicy as it can get.
Maybe give the durian fruit a miss though, it absolutely stinks !!!

I had a 12 year chapter in my life when after an initial 6 month period in Thailand I returned roughly every 8 months for 3 weeks to revisit a a Thai lady and her family. COVID came along that caused an extended hiatus but reality also hit home that there wouldn't be a happy everafter for both of us, mainly due to immigration restraints and my health, we are still in regular contact as friends though.
I don't think I have had Thai food even though there are a lot of Thai restaurants in my area. Thailand is on my list of countries I plan to visit in the future, so I'm going to have to learn Thai food. Maybe Running Man can help me figure out what I could try.

Key question would be do you like chillies ? 😘 when you are on a cycle tour it can be a touch hard on the stomach especially when you can't speak the language.
Top tip the street side vendors are awesome, just try to notice the ones the locals go to, phenomenal value for money. If you choose chicken, be a touch careful, the whole bird goes in !!
It's interesting that you say that everything is spicy because I tend to tone the spice down in what I cook. Chili's are fine as long as they are not too hot. I like a mild ones anyway.
I will definitely avoid the chicken, thanks for the warning. Actually I'm a vegetarian. Not sure how I will fare in a country like Thailand as a vegetarian. I'm okay with picking the meat out If need be.

I'd imagine you would be fine, there is a wide range of fresh vegetables and fruit available, tofu is also widely available. Street vendors might not be your best option though. Thais default is as spicy as they can handle. Mai pet is the literal phonetic translation for not spicy, but even that is a matter of degrees 😉😉

Just spotted 'biking' on your profile my choosen sport for 36 years, running is a substitue since blood clots and medication. Road or off road ?
@runningMachine I used to do mountain biking, now I'm lucky if I can get on a bike at all. I still like riding, but do more indoors due to physical barriers.

Due to working shifts I only make a spin class every other Sat, last time it was just me and the PT, we switched roles, he was in a state and just said never again 😉😉

In Nakhon Ratchasima, Korat they serve the fish from the local streams over rice, skin eyes and fins all intact, the chillie sauce dip is something else... after a few trips i love the dips as much as the locals 😉

The do too, just pull it apart with their fingers, fold it into a leaf, sometimes ads some sweet chillies sauce maybe a few pinched fingers of rice, chillies to taste an pop it in....
Absolutely delicious, and I daren't start on the number of side dishes on the floor with it as the whole family crouches down and tucks in ..

My favourite dish that as a staple during my visits was Laab, it was a regional dish, I regular cook it at home and for a couple of colleagues at work (not too much chillie) 😄😄

It's essentially pork mince with ground fried rice to give it texture cooked fried in fish sauce with garlic, touch of lemon juice, garlic and chillies to taste. Often served with rice. It was this dish when i asked how many chillies when Monta grabbed two handfuls, she was only a petite 4ft 10 😉😉
