I used to want to see Ireland, & Spain even more. These days I don't feel any urge to go because of latent antisemitism in those countries (particularly Ireland)...it's sad, really.
Have been interested in Japan for a good while now, but they're limiting tourist access to many of their famous places. There probably wouldn't be any point to a trip unless I wanted to learn their traditional carpentry/joinery. It would be fantastic if I was physically up to it.
Where I'd really like to go is Italy. For at least two weeks...a month would be better. Enough time to soak up the culture. I'd get out into the countryside & check out the vineyards, do some wine tastings...god, it would be great.

@genericbeing I've always wanted go to Ireland. I envision lush, green grass and people who are fair skinned and have red hair like myself. I've always thought of Ireland as beautiful. Just to get out of the u.s. and experience a different way of living would be nice.
