Chocalte cake and ice cream

Rote Grütze (Rødgrød; Rode Grütt)--

It's a berry pudding layered with vanilla bean-flavored, freshly whipped cream. Traditionally made in Denmark, Friesland, and Northern Germany.

3 types of (usually red --> Rote) berries are used. Often it's raspberries, strawberries and sour cherries, as these are easiest to find year round (seasonally, it's made with wild berries; fresh or frozen. So, often it is served in Fall and Winter).

These berries are briefly cooked with a bit of sugar, red wine and a thickener (like arrowroot, cornstarch or potato flour). Then the mixture is placed in the fridge to cool and finish "setting up".

Vanilla sugar* is added to fresh cream and whipped. Then you build a parfait-like dessert with alternate layers of berry compote and whipped cream. Top it off with a few sprinkles of a toasted grain (Grütze) ...like wheat germ or toasted oats or toasted barley.••

*Vanilla sugar is made by placing vanilla bean pods in a large amount of finely granulated sugar. This is left to sit (stirring multiple times to distribute the flavor) for about 3 days or until the vanilla taste is strong enough.

-->> This is a cooking staple (made far in advance) for desserts and has a smoother more complex flavor than just adding vanilla extract and plain sugar to a recipe.

->♡You can "cheat" and make vanilla sugar with vanilla extract, instead of the pods ...though it still needs to be stirred and allowed to "marry" over 3 days time.

••Note: if you are interested in toasted barley, you could use "Sugar Smacks" cereal (it's basically puffed/toasted barley that has been sweetened). 🙂
