While more of a snack item... I eat alot of Trail Mix. I buy the ones with dried fruit and nuts
This doesn't sound very extraordinary, but I just like making sandwiches in general. It's a good way to pack in carbohydrates, protein, vegetables, calories, etc. Sometimes I would have a sandwich with whole wheat bread, hummus, sundried tomatoes, and an avocado. I usually have this with a mixed fruit juice and tabouli.

I love crock pots, that was my go to cooking tool in college :)
I love to make a big batch of roasted veggies and then just add them to everything - eat with an egg for breakfast, in my pasta for lunch, on the side of some protein for dinner, just with some hot sauce for a snack - basically, wherever I feel like I need a little more veg, I can add them in and only have to make them once. :)
I also LOVE avocado toast with ricotta and lime juice for protein, whole grains, good fats, and super filling. I eat some fruit on the side usually to finish out my plate.
