Burger Bliss

While for many burgers are synonymous with barbeques and summer, these little precious patties are great to cook up in a frying pan, or even bake in the oven year round. But what makes a burger a burger? Is it the bun? The patty?...

According to the Oxford dictionary, a burger is defined as a dish consisting of a round patty of ground beef, or sometimes another savory ingredient, that is fried or grilled and typically served in a split bun or roll with various condiments and toppings. So while the classic example may be a beef burger, this may also include other savory options like chicken burgers, fish burgers, pork burgers, and yes even veggie burgers!

I’m vegetarian so my burger recipes are too, but here is one of those you might enjoy even if you usually stick with beef patties. (For me, I like veggie burgers that aren’t trying to taste like meat!)

Chickpea Veggie Burgers (Makes about 6-8 patties)

Ingredients:

1 - 19 oz can chickpeas, rinsed, well drained and mashed

1 cup grated zucchini, lightly packed

⅓ cup finely chopped red onion

1 cup quick oats

3 tbsp finely chopped fresh parsley or basil

3 tbsp balsamic vinegar

2 tbsp extra virgin olive oil

1 tbsp of your favourite barbeque or hot sauce

2 tbsp peanut butter (this acts as a binder)

1 tsp cumin

1 tsp garlic powder

1 tsp black pepper

1/2 tsp salt

Directions:

1. In a large bowl mash the rinsed and drained chickpeas with a fork or immersion blender.

2. Add all other ingredients and mix well. (You can use your hands for this!)

3. Divide and shape mixture into 6-8 patties.

4. Heat 1-2 tsp oil in a nonstick pan over medium heat and cook the burgers for about 5 minutes per side until browned and firm. (If you would prefer you can bake at 400 F for 20-30 minutes, flipping half-way through.)

5. Enjoy served on a bun with your favourite toppings!
