To kick us off I’ll share my peanut butter cup brownie recipe.


Peanut Butter Cup Brownies


Ingredients:

Brownie:

1 1/3 cups all purpose flour

1 tsp baking powder

1/2 tsp salt

1 cup butter

1 cup cocoa

2 cups sugar

4 eggs

1 1/2 tsp vanilla


Peanut Butter Frosting:

  • 1/4 cup butter, softened

  • 3/4 cup creamy peanut butter

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • 1-3 tbsp milk or water, as needed to thin icing


Chocolate Glaze:

  • 5 tbsp butter

  • 1 cup semisweet or milk chocolate chips (depending on personal preference)

  • Optional chopped peanut butter cup pieces


* Note tsp is teaspoons, tbsp is tablespoons.


Directions:


Brownie:

  • Stir together flour, baking powder and salt in a small bowl.

  • Melt butter in a large saucepan.

  • Remove butter from heat and stir in sifted cocoa.

  • Blend in sugar, eggs and vanilla.

  • Blend in dry ingredients.

  • Pour batter into greased 13*9*2-inch (3.5L) rectangular baking pan.**

  • Bake in a preheated 350F(180C) oven for 30 to 35 minutes or until done.

  • Cool completely before icing or glazing.

** - I like to grease the pan then dust it with cocoa powder, much like greasing and flouring a pan - it helps release the brownies better without the white of flour and adds a bit more cocoa flavour.


Peanut Butter Frosting:

  • Beat together butter and peanut butter until smooth.

  • Add powdered sugar and vanilla and beat again until smooth.

  • Add a little splash of milk or water, beating well until light and fluffy.

  • Add a bit more milk or water if the frosting is too thick, or some extra powdered sugar if it’s too thin. Small additions can make a big difference so less is more!

  • Spread in an even layer over cooled brownies.

  • Refrigerate while making glaze.


Chocolate Glaze:

  • Combine butter and chocolate in a microwave safe dish.

  • Microwave in 30 second intervals, stirring in between, until just melted and smooth.

  • Allow to cool for a few minutes before pouring evenly over frosted brownies.

  • Sprinkle with chopped peanut butter cups if using, then refrigerate once more until chocolate glaze is set.(You can store the brownies in the fridge or at room temperature once the chocolate glaze has set!)

Oh, and if you like a certain brand of peanut butter candy, you may want to try just make the peanut butter frosting recipe I shared. I may have made just the frosting without the brownies on occasion. 🤣

@EmotionsListener. I only made brownies from 1 recipe and they turned out really good. I haven't tried other recipes. The one I make has frosting, I haven't made them in years. Your recipe looks good.

@EmotionsListener. I found the recipe online years ago but when I made it I had trouble with the frosting so I changed the frosting. I'll copy the actual recipe and then give my notes.

Ingredients

  • ½ cup butter

  • 1 cup white sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • ⅓ cup unsweetened cocoa powder

  • ½ cup all-purpose flour

    ¼ teaspoon salt

    ¼ teaspoon baking powder

    Frosting:

    • 3 tablespoons butter, softened

    • 3 tablespoons unsweetened cocoa powder

    • 1 tablespoon honey

    • 1 teaspoon vanilla extract

    • 1 cup confectioners' sugar

      Directions

      1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.

      2. Melt 1/2 cup butter in a large saucepan. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, flour, salt, and baking powder. Spread batter into prepared pan.

      3. Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, about 25 to 30 minutes. Let cool briefly before frosting.

      4. To make the frosting: Combine softened butter, confectioners' sugar, 3 tablespoons cocoa, honey, and 1 teaspoon vanilla extract in a bowl. Stir until smooth. Frost brownies.


        Notes: When melting the butter I did it on low heat. I didn't want the saucepan to get too hot because I thought it might cook the eggs. I left the eggs out of the refrigerator for the while to try to bring them to room temperature. Maybe you can melt the butter in the microwave or stove top however you want to do it and then put everything in a bowl so you won't have to mix everything in a hot saucepan. For the frosting, instead of using 3 tbs of butter, I used 4-5 tbs and I melted the butter. The frosting is really sweet but I like it lol. If you want you can cut the frosting recipe in half.

@EmotionsListener I have never tried peanut butter frosting, what a great idea! I will try this one, thanks for the idea.

I have allergies but peanuts are ok so my recipes are pretty unusual, but I will look at writing one up

I wasn't sure about it the first time I made this recipe, but when I tasted the peanut butter frosting I was ready to just sit and eat it and figured it was safe to put on my brownies. I've made it with all peanut butter as well instead of adding some regular butter.

Unusual recipes can still be good, sometimes they are even better. I'm looking forward to seeing one of your recipes!

Oooh, yummy recipe @EmotionsListener 😋

Here is my go-to recipe for easy brownies -


Ingredients

  • 185g unsalted butter
  • 185g dark chocolate
  • 85g plain flour
  • 40g cocoa powder
  • 50g white chocolate
  • 50g milk chocolate
  • 3 large eggs
  • 275g golden caster sugar

Method

STEP 1

  • Cut 185g unsalted butter into small cubes and tip into a medium bowl. Break 185g dark chocolate into small pieces and drop into the bowl.

STEP 2

  • Fill a small saucepan about a quarter full with hot water, then sit the bowl on top so it rests on the rim of the pan, not touching the water. Put over a low heat until the butter and chocolate have melted, stirring occasionally to mix them.


STEP 3

  • Remove the bowl from the pan. Leave the melted mixture to cool to room temperature. While you wait for the chocolate to cool, heat the oven to 180C/160C fan.


STEP 4

  • Using a shallow 20cm square tin, cut out a square of non-stick baking parchment to line the base. Then, tip 85g plain flour and 40g cocoa powder into a sieve held over a medium bowl. Tap and shake the sieve so they run through together and you get rid of any lumps.


STEP 5

  • Chop 50g white chocolate and 50g milk chocolate into chunks on a board. Then, break 3 large eggs into a large bowl and tip in 275g golden caster sugar. With an electric mixer on maximum speed, whisk the eggs and sugar. They will look thick and creamy, like a milk shake. This can take 3-8 minutes, depending on how powerful your mixer is. You’ll know it’s ready when the mixture becomes really pale and about double its original volume.


STEP 6

  • Pour the cooled chocolate mixture over the eggy mousse, then gently fold together with a rubber spatula. Plunge the spatula in at one side, take it underneath and bring it up the opposite side and in again at the middle. Continue going under and over in a figure of eight, moving the bowl round after each folding so you can get at it from all sides, until the two mixtures are one and the colour is a mottled dark brown. The idea is to marry them without knocking out the air, so be as gentle and slow as you like.


STEP 7

  • Hold the sieve over the bowl of eggy chocolate mixture and resift the cocoa and flour mixture, shaking the sieve from side to side, to cover the top evenly. Then gently fold in this powder using the same figure of eight action as before. The mixture will look dry and dusty at first, but if you keep going very gently and patiently, it will end up looking fudgy. Stir in the white and milk chocolate chunks until they’re dotted throughout.


STEP 8

  • Pour the mixture into the prepared tin, gently ease the mixture into the corners of the tin and paddle the spatula from side to side across the top to level it.


STEP 9

  • Put in the oven and set your timer for 25 mins. When the timer goes, open the oven, pull the shelf out a bit and gently shake the tin. If the brownie wobbles in the middle, it’s not quite done, so slide it back in and bake for another 5 minutes until the top has a shiny, papery crust and the sides are just beginning to come away from the tin. Take out of the oven and leave until completely cooled.


STEP 10

  • Cut, serve and eat! 😋

Fudgy Cranberry Walnut Brownies

~yields 16 bars @ 350 degrees baked in an 8" by 8" square tray

* Unsalted butter 6-tbsp

* Ghirardelli Bittersweet Chocolate Chips-1 cup

* Turbinado Sugar In The Raw-3/4 cup

* Pure Vanilla-1 tsp

* Salt-just a pinch

* Organic eggs-2

* All Purpose White Flour-1/2 cup

* Fresh Cranberries-3/4 cup

* Walnuts-3/4 cup (chopped)

DIRECTIONS:

1. Preheat the oven to 350 degrees.

2. Grease a baking tray with butter, line with parchment paper.

3. On low heat, melt butter and chocolate chips.

4. Once they melt, turn off the heat. Remove from the stove.

5. Add sugar, vanilla, and salt. Mix well. The batter will be a bit grainy, this is ok.

6. Add one egg at a time. Stir well in between.

7. Add flour, Mix but do not over mix.

8. Add cranberries and walnuts. Mix until well combined.

9. Pour the batter into the baking tray.

10. Bake for exactly 30 minutes.

Sweet, tart, and crunchy, so very good!!

So many yummy recipes here!!

I'm rubbish at baking but there is a local company that make a mix with no flour or eggs and it makes a pretty decent brownie. And brownies should definitely come with ice cream!! 😋

Flourless brownies can be yummy for sure. I'll pass on the ice cream myself however.

But, here's a quick 5 ingredient flourless brownie recipe:

Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup chocolate chips (semi-sweet or dark)
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup unsweetened cocoa powder

Directions:

  • Preheat oven to 350°F(180°C).
  • Lightly grease an 8×8-inch baking dish.
  • Place the butter and chocolate chips in a large microwave-safe bowl.
  • Microwave for about 2 minutes, stirring every 30 seconds, until the chocolate chips are melted and smooth.
  • Whisk in sugar.
  • Whisk in eggs one at a time until batter is smooth.
  • Add cocoa powder and stir until well combined.
  • Evenly spread batter into prepared baking dish.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Cool completely in pan.

And of course that most important step: Enjoy!

I really wish I could bake normal sweets. I’m a diabetic so I can’t eat them. I’ve yet to try to make a keto version. The issue with most keto recipes is they’re not the same texture wise. 😭 it could taste amazing but if the texture isn’t good, no thanks. Lol.

Diabetic friendly brownie recipes are definitely a bit challenging to find, sadly brownies are very high in sugar even as baked goods go.

I know I have a recipe that uses black beans and less sugar, mostly in the form of maple syrup. But the texture and flavour can certainly be a bit different, not bad, but not quite the traditional brownie experience. With the recipe I have the best way to get a good texture is to use a really good blender and blend the beans and other ingredients really really well.
