luxury brownies

Hey folks, made 3 trays of brownies today...so thought I would post the recipe for anyone who wishes to try it....

Ingredients

300g caster sugar

3 large eggs

250g salted butter

200g plain chocolate

70g self-raising flour

60g cocoa powder

80g approx filling of choice (chopped nuts, chopped up terry's orange, white choc buttons, crunchie bits, cherries etc)

Method

Preheat oven to 180 degrees (gas 4.5)

seperate the egg whites from yolks. Whisk egg whites, slowly adding half the sugar until stiff peaks form

Meanwhile break up the chocolate and melt gently adding half the butter towards the end. Allow to cool.

Transfer the whisked up sugar and egg whites into the bowl of chocolate and butter (dont mix) and place in fridge

Cream the remaining butter and sugar and add the egg yolks one by one towards the end.

Remove the chocolate and egg white mix from the fridge and fold

Mix the combined chocolate and egg white mix into the creamed butter, sugar and egg mix

sieve the cocoa and self raising flour into the mix and fold. Use a mixer to combine these ingredients well.

Line a brownie tin with foil and lightly grease. Spoon half the mix into the tin and spread evenly

Scatter the filling over the mix

carefully soon over the remaining half of the ingredients and cook for 22-24mins in the middle of the oven.

ASAP after removing from the oven, loosely cover the tray with foil and place in the freezer. This stops the cooking process and keeps them well risen.

@SakuraSkye Be good to have your feedback...my friend uses bournville chocolate and bournville cocoa powder in her brownies but any plain chocolate works and its good with a filling...did one that had a terrys chocolate orange chopped up (about half of one)

Just finished making them! I decided to use the daim cadbury bar (my favourite!) and they turned out scrumptious!
They were really chocolately and cakey! I cooked them for about 24 minutes.
Thanks for the tip about putting them in the freezer! I never thought about doing that before! Will be trying that with a few more baked goods! <3

@SakuraSkye Glad they worked out for you and you can use any filling you like :) I actually overcooked a tray by 5 mins and found they came out better than the 22-24mins in the original recipe.....You can use cut up matchmakers in the filling, cocktail cherries. chopped up mint aero, chopped nuts...anything you fancy ....enjoy and Im sure all your friends would too :)

I think I'll try putting orange zest in them next time! <3
