I'm very close with my mother. She hasn't had an issue with any girlfriend in the past but she absolutely hates my current girlfriend for reasons assumed by her and hypotheticals made by her. I'm now dating my girlfriend in secret and I don't know what to do.

if you think this relationship will last you will need to deal with it sooner than later ....if it is just for the meantime keep your secret.
The reality is you are assuming why a parent does not like a gf/bf sometimes it is not why you think it is.... If this is long run .........you will need to find a solution....
