My mom gets annoyed at my stimming
I rock back and forth, flap my hands, and bounce my leg and she says a act like the Autistic kids in Special Education, does anyone have any advise as to what I should do or say?

I think it depends on who "she" is and your relationship to this person. Does it matter what this person says or thinks? Are you comfortable with saying something back to this person?

oh I'm so sorry, I completely missed that part even though it was in the title. Um, in that case I would see if it feels safe to talk to her about it. It's up to you on addressing the stimming you're doing.
Some questions:
-Would she get it (or be open to getting it) if you explained how it helps/what it does for you?
-Do you care to have a conversation about misconceptions (because it sounds like from her comment that she stereotypes autistic people and stimming...)?
Here's an example:
I'm a queer person and doing daily life I come across some fairly ignorant people. They make some comment about gay marriage when I am not even gay but they assume I am. I ask myself: do I want to provide education right now to this person? Is it based on how bothered I am or my energy levels?
Sometimes I let something slide because I literally just want to make my purchase and leave or whatever that it is. Or maybe I'll take some emotional labor and have some conversation about it. People need education.
It’s okay, I miss stuff like that too, and I haven’t tried talking to her about it because sometimes she doesn’t take stuff like that seriously, and I understand because I’m Bisexual and some of my ex-friends found out and thought I had crushes on them and called me gross. I explained to some people about it and they weren’t as repulsed.
I feel like this question is still a good one. Primarily the "are you comfortable with saying something back to this person?"
After being married to my wife for 11 years this month now, I have learned that being comfortable saying certain things to your mom is a big question. We are both females, but she is in a more traditional Mexican household and I am half traditional and half not.
My mother and I would talk about mental health, even in high school. A big part because she had severe depression a majority of my life and I saw it all. I didn't understand it then and my father manipulated it, but I saw it. Now we talk about it and have dark DARK humor.
My wifes family can barely talk about the passing of someone's death or each other's periods and hide and emotions.
So stimming...I would say it depends on who your mom is and how she feels about mental health. Pro getting help? If not, then maybe education her. I've had to educate my mom on some things in the queer community like when I said I was pansexual. Takes time and maybe some videos if they are visual learners.
