Butter egg fry, or gondo datshi, is like the ultimate Bhutanese scrambled eggs you can imagine.
Eggs, are scrambled up with datshi cheese, and a huge amount of butter, and in some cases small bits of dried chili. The result is a very condensed scrambled egg cheese mixture that is fragrant from butter and packed with heartiness.

If there’s one dish I wanna actually try convince people to try from the Bhutanese cuisine is the Ema Datshi and not because it’s the National Dish of Bhutan hehe but because it’s soooo good and comforting and worth trying for how simple it is to make! 🥰
Ema Datshi literally means chillies and cheese xD so the ingredients and making is actually quite minimal!
Ingredients
- 8–10 chillies (traditionally long Bhutanese chillies; at home use large green chillies also work, some people also like to balance out the spice by using red/ yellow peppers too and for a vibrant colour on your plate lol)
-1 medium onion (sliced)
-2–3 cloves garlic (optional but nice boost of flavourrrr)
-150–200 g cheese
(Traditional is yak cheese, but whichever one is comfortable with; I use a mixture of mozzarella and feta too)
-½ cup water
-1 tsp butter (or oil)
- Pinch of salt and black pepper to taste
Method
1. Prep chillies Slice chillies lengthwise (keep seeds if you want authentic heat lol 🔥).
2. Boil the base In a pan: add little bit of butter/ oil, to which add chillies, onion, garlic, water, salt, pepper. Simmer 8–10 minutes till chillies soften.
3. Add cheese: Lower flame, add cheese.
4. Finish: Add butter, gently stir till everything combines and then cover the lid for the cheese to melt into a creamy-soupy sauce. Don’t overcook, it should be silky in texture, creamy broth style hehe!
How to eat?
Best paired with steamed rice 🥰 most comforting combination hehe!
Can also be eaten with rice alternatives (quinoa, millets), steamed buns, dumplings or tortillas etc.

Once you develop a taste for Ema Datshi I think you can add it to anything xD eat with steamed rice (the more popular combination), millets of choice, with tortillas or as a filling between sandwiches and wraps, any which way one wants to eat!
It’s cheeseeeee! Mixed with the right amount of spice, there’s vvv less chances of this combination going wrong hehe! 🥰

Can try first with less chillies hehe! But honestly the cheese balances it out. So it’s a little spicy but in a very “hits the spot right” way! 🥰

Bhutanese foods are amazing. I have traveled to Bhutan long time ago. What surprised me was they put a lot of cheese in their food. Which made it even more delicious. Bhutan is a beautiful country. Highly recommended to visit!
