Choila is a specialty of the Nepalese Newari, and it consists of grilled meat - either water buffalo, chicken, or mutton. The dish is characterized by its spiciness coming from green and red chilis, along with spices such as turmeric and fenugreek seeds.

It is usually served with a side dish of pounded rice.

@jesusredeemedme2425 Where do you typically source Water Buffalo meat in Nepal? food markets? can you buy in supermarkets there? we do not have Buffalo as a beef option in New Zealand. I am curious how the average Nepalese go about sourcing this meat.

Our traditional method of cooking in Maori culture is called Hangi. The food is steamed in a pit in the earth, it has smokey earthy flavor, when done well it falls off the bone.

Dal Bhat Takari - It consists of several foods, the first being Dal which is the lentil soup, Bhat which is the rice, and Takari which is the vegetables. The dish can also be served with various meat or fish, sometimes even an omelet and various sides or sauces. Dhal Bhat can be eaten in different ways but the locals usually pour the soup over their rice and then mix in sauces
