Hi, I’m from Iranian and a popular dish from there that I really like is Tahdig !! It is often paired with Ghormeh Sabzi but it is still a specialty of our cuisisine consisting of crisp, caramelised rice taken from the bottom of the pot in which the rice (chelo) is cooked.
The texture is mostly soft on the inside but crispy and crunchy on the outer parts. My mom makes it a lot and it tastes absolutely perfect each time. Many sometimes even pit raisins or pomegranates on it to add more flavour,, I recommend it for anyone whose looking forward to trying Irani dishes :)

Pistachio maamoul cookies are deliciously buttery, lightly sweet, and crumbly shortbread cookies, made with farina, butter, flavored with mastic, and mahlab. Then filled with a pistachio mixture flavored with orange blossom water.
