Canada produces 75% of the worlds pure maple syrup, of which 95% is produced in Quebec.
This is our emblem and it tastes delicious! It's an old tradiction of more 2000 years.

Maple syrup is 100% pure and natural, and producers must adhere to strict guidelines and standards set forth by Canadian law and the Federation of Quebec Maple Syrup Producers (FPAQ) throughout the production process. The Federation of Quebec Maple Syrup ensures the economic, social and ethical interests for all the maple businesses in Quebec. The industry is worth several million dollars. It worth about $10 per liter.

All maple syrup barrels that are produced are tasted by professional evaluators and a score is given to each of them.
Several items are checked: the level of sugar, the color, the impurities if any.... and are classified by quality grade.
They all receive a classification depending on the flavor and color that determines the value of the product.
This classification standard includes three categories and five grades of syrup: Canada #1 (Extra light, Light, Medium), Canada #2 (Amber) and Canada #3 (Dark). The quality control guarantee a high price on the market. no dilution is possible.

The production of maple syrup evokes the relationship between the human and nature. There are no pesticides, no fertilizers, no products to treat. Everything is completely natural. Maple syrup is full of minerals and is rich in polyphenols, which have the property to reduce type 2 diabetes, obesity and cardiovascular disease. Another advantage, maple syrup contains sucrose, which is a sugar that is absorbed more rapidly and remains long in the blood. Additionnaly, It's full of an antioxidant that we find ONLY in maple syrop called quebecol, which has anti-inflammatory and antiproliferative effects very effective. There are also over 50 polyphenols with unique properties.

I love maple syrup too much and eat over 10 liters by year!

I can drink it straight from the bottle! It's some kind of miracle I haven't developed diabetes!

Maple syrup has a beneficial effect for people with diabetes by reducing inflammation of the blood vessels.
Also they shown that the maple syrup consumption causes a rise in blood glucose less than that observed for white sugar, corn syrup or brown rice syrup and were assigned a low glycemic index.
Maple syrup contains plant hormones that promote glucose uptake by muscles, without additional insulin secretion by pancreatic beta cells. This greater "tolerance" glucose by muscles contribute to better control of glycemic.
So it balance for the quantity of sugars in it, I guess :p

Hahaha! I laughed so hard! I can totally relate to your comment. Our blood is probably made of 90% maple syrup. Otherwise, I don't understand why we didn't develop diabetes.

Un peu cliché comme sujet pour représenter le Québec, mais il faut avouer que rien n'est meilleure que la tire d'érable sur neige ;)
