Cooking Tofu

@TortueDesBois I think it was you who first got me to realize I could prepare tofu at home. Other than the prepared dessert things, it's never really occurred to me that it's an at home thing! I finally got around to giving it a try.

I checked online and most of the few things I looked at said to fry in a bit of oil and flavour after. It wasn't bad but neither my husband nor I am fans of frying with oil nor the mess it makes! Would love to hear some recipes/cooking tips. I'm thinking more of the non-silky firm tofu, but welcome all ideas :)

@AffyAvo Hello! How are you doing, Affy?
My tip, especially if you are stir frying tofu or grilling it is to marinate it for at least a couple of hours before hand. Even overnight is fine. It greatly enhances the flavor, especially if you have pressed out some of the water prior to marinating it. The tofu soaks up the fluid like a sponge.
You'll definitely want to use firm or extra firm tofu for these methods.
My marinade can be something as simple as plain oyster sauce, or maybe a little soy (light colored is great)/garlic/ginger combo. Add a little spice if you want with crushed red pepper flakes.

@ladylazarus1971 Thanks! That sounds better. I will probably try skipping the oil too, we don't use it for chicken. I'm ok if it's less brown and crispy than I can get it with oil.

I ususally use a stir fry sauce with a soy sauce and rice vinegar base, it tasted good on the tofu after, will probably be better marinated before!

@AffyAvo I agree with marinating the tofu for a few hours or overnight. It's good at soaking up flavors. Garlic and ginger are some of my favorites too, but also cumin, tumeric, curry, coriander. Then throw it in a stir fry with veggies.

This is my go to recipe (and a link to the video it came from https://www.youtube.com/watch?v=CmTKqBu5fOw. It's delicious and super easy. Let me know if you give it a try!

Baked Tofu

1 block firm tofu

1 tbsp Sweet chili sauce

1 tbsp Tahini

Coconut oil spray

Preheat oven to 375 F (180-200C). Press most of the liquid from the tofu, then cut into cubes. Lightly spray baking dish with oil. Mix chili sauce and tahini together, then toss with tofu to coat. (You can also let the tofu marinate a while in the fridge.) Place tofu in dish and bake about 20 minutes or until crispy.

Baking works well, and if you aren't worried about it being as crispy as it is when fried in oil, I have a good amount of luck right on the stove in a non-stick pan without oil. I believe you can also grill it, though I haven't tried that. Let us know if you find a method that works well - I'm always looking for new tips!

@Anomalia Grilling it in thick slabs after marination is excellent! You may have to use foil or a pan though, since it sticks like the dickens and falls apart.

Using foil is just a great tip in general; I always use it when I grill things that can fall in or tend to stick! :p
