HELLO HELLO AND HELLO!

Today I take the opportunity to share with the community of 7Cups some healthy recipes ( combined from around the world)..

These recipes are just not healthy but also tasty..

I will list three of the healthy recipes that are absolutely delicious and you can add your own recipes too!! (If we love your recipe, we will post it as one of our posts giving you the credit ofcourse! )

1. SPANISH MEAT BALL AND BUTTER BEAN STEW:

Procedure:

Season the pork, working the seasoning in with your hands, then shape into small meatballs. Heat the oil in a large pan, add the meatballs and cook for 5 mins, until golden brown all over. Push to one side of the pan and add the onion and peppers. Cook for a further 5 mins, stirring now and then, until the veg has softened, then stir in the garlic and paprika. Stir everything around in the pan for 1 min, then add the tomatoes. Cover with a lid and simmer for 10 mins.

Uncover, stir in the beans, the sugar and some seasoning, then simmer for a further 10 mins, uncovered. Just before serving, stir in the parsley. Serve with crusty bread for dunking, if you like.

2.Quinoa Tabbouleh:

Procedure:

Cook the quinoa following pack instructions, then set aside to cool.

Make the dressing by adding the olive oil, vinegar, lemon juice, vanilla extract, rice syrup, pinch of salt and garlic into a jug and whisk until smooth. Mix this into the quinoa and mix together with all the other ingredients. Serve on a bed of salad leaves.

3. Supergreen Soup with Yoghurt and pine nuts:

Procedure:

Heat the oil in a medium saucepan over a low-medium heat. Add the onion and a pinch of salt, then cook slowly, stirring occasionally, for 10 mins until softened but not coloured. Add the garlic and cook for 1 min more.

Tip in the potato followed by the veg stock. Simmer for 10-12 mins until the potato is soft enough that a cutlery knife will slide in easily. Add the bag of salad and let it wilt for 1 min, then blitz the soup in a blender until its completely smooth.

Serve with a dollop of yogurt, some toasted pine nuts and a drizzle of chilli oil, if you like.
