Hey friends!

When October rolls around, I'm fully ready for all my favorite fall treats. Normally most of them involve apples, but this one is pumpkins. You just use the pureed pumpkin from a can. This recipe is something I would always wait for my my Mom to make this time of year. They're soft, spicy, and the cream cheese frosting adds the perfect sweetness. People love them at potlucks and gatherings!

Pumpkin Cheesecake Bars with Cream Cheese Frosting

Ingredients:

4 eggs

1 2/3 cups granulated sugar

1 cup vegetable oil

1 15 oz. can pumpkin

2 cups sifted all purpose flour

2 teaspoons baking powder

2 teaspoons ground cinnamon

1 teaspoon salt

1 teaspoon baking soda

(8 oz) package softened cream cheese

1/2 cup softened (or margarine) Butter

2 cups sifted confectioner's sugar

1 teaspoon vanilla

Directions:

Preheat the oven to 350 °F.

Using a mixer at medium speed, mix the eggs, sugar, oil and pumpkin until light and fluffy.

Stir together the flour, baking powder, cinnamon, salt and baking soda.

Add the dry ingredients to the pumpkin mixture and mix at low speed until fully mixed. The batter should be smooth.

Spread the batter into a greased 9×13 inch baking pan. Bake for 30 minutes.

Let cool completely before frosting.

Cut into bars.

To make the icing:

Combine the cream cheese and butter in a medium bowl with a mixer until smooth. Add the confectioner’s sugar and mix at low speed until combined. Stir in the vanilla and mix again.

Spread on cooled pumpkin bars.

Well Tova i just ate 2 bars and i was like "holy cow!"

Now i realize why you suggested them.. i enjoyed them fully, however i thought that they should be made in November as part of a Thanksgiving dessert. i thought they would be harder they were very moist and i definitely tasted the pumpkin goodness..  The frosting perfectly complimented the bar it self.. i would rate the experience overall from a rating of 1 to 10 i would give it a 9!

I'm gonna eat up as many as i can lol!!🤣

I'm gonna also thank you as well as my wife for trying so hard to make them....

Thank YOU Tova!!!🌟
