Cheese Fondue
I often make this for New Year's Eve, Valentine's Day or a weekend like this weekend - long right after Valentine's Day when we had some time!
Adapted from Peggy Fallon, Great Party Fondue
450 g Cheddar
225 g Gouda
1.5 cups Apple Juice or cider (sometimes I add a bit of cinnamon to apple juice)
1.5 tbsp Cornstarch
1.5 tsp Powdered Mustard
Splash of Lemon Juice
Nutmeg
Grate the cheese and mix in the cornstarch and powdered mustard. In a fondue pot or on the stove, heat up the apple juice and lemon juice, I often bring it up to a simmer and then turn down the heat slightly. Slowly add in the cheese mixture, whisking and allowing it to melt after each addition until it's all added. Turn down the heat slightly more and then sprinkle in the nutmeg, I like to stir it around once to make a pretty swirl pattern.
Dip in whatever you like - broccoli, cauliflower, apple slices, peppers, carrots, bread, etc.
This is also good as a thick sauce spooned over broccoli and cauliflower.
This fondue is great for people who do not like the traditional swiss cheese/wine fondue or anyone who just wants to avoid alcohol in general. If serving to young kids, consider giving them them a small personal bowl, it will be a bit cooler and less messy.

I've actually never had cheese fondue, I love cheese but it doesn't love me. But the last few years I've found vegan cheeses improving to the point where who knows I may try a vegan cheese fondue.
