I make a vegan minestrone soup. You take equal parts of tomato juice and vege stock. I usually add italian spice mix, garlic, and some a little bit of chili powder. Unfortunately when I cook it's all taste. I don't measure my spices. I add a couple cans of black beans, diced tomatoes, whatever fresh veges u want. Slow cooker for about 8hours on low. The last 20min I add some arugula and cook that down. I love the peppery flavor it adds. 😀

I must try this. I was vegetarian for a couple years and went back to eating meat for health and financial reasons, but I would love to go back. Thanks for the recipe. If you have some specific measurements (I wish I could know what to taste actually tasted like) I would love that

The best Vegan recipe is also super easy:

Frozen bananas + blender/food processor = Banana Nice Cream

You can also add in any other frozen fruits (strawberries, blueberries, mango, etc.) to change it up!

Try it...you'll never go back!

I found this recipe for vegan chocolate chip cookies a while back, they came out really good when I made them! Using coconut oil in the recipe definitely gives a coconut-y flavor, but I'm sure you could sub it for vegetable or canola oil if you wanted!

cup coconut oil
1 cup brown sugar
cup almond milk
1 tablespoon vanilla extract
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
teaspoon salt
1 cup vegan chocolate chips

Bake at 350 for 7-10 minutes

Banana ice cream!

Chop up bananas & put them in the freezer until frozen.

when it's frozen whisk it.

magic will happen!

It will become the same texture as ice cream.

you can add anything to it to add to the flavour. I usually add peanut butter.

enjoy!

I have tons of recipes, but I' going to share the simplest one to make

Simply toss pasta with 1 1/2 teaspoons olive oil, breadcrumbs, parsley, lemon juice, garlic powder salt, and black pepper; Much healthier than any cream sauce. You can omit the breadcrumbs if you want, I normally do :)

@sensitiveLemon- This sounds yummy and if used with a dehydrator, it could also fit raw vegan diet.

I'm not a vegan, but I cook at least 50-75% vegetarian, so I end up with a lot of vegan recipes. I have found that cauliflower is a super versatile veggie that can be subbed for a lot of other products, so if you're looking for recipes, you can count on eating a lot of that, but here are some favorites (I'll link to each and give some notes to make them easier to read).

Vegan Cauliflower Casserole - a nice tomato-y, lemon-y casserole. Very warm and comforting and feels surprisingly indulgent. I found it tastes better the next day and can use just a little extra lemon and salt.

Roasted carrot and avocado salad - I was skeptical about the combination, but they are DELICIOUS together! This has become one of my favorite sides, but you could scale it up for a meal if you added in some protein.

Kimchi pancake - you have to scroll down the page a bit to get there, but it's a pretty easy recipe. I think vegan food can sometimes get a bad reputation for being bland, but nothing with kimchi can be described that way!

Crispy orange cauliflower - one of my old favorites was orange chicken, but the meat was never what I liked - it's all about that sauce! This was a great alternative for me. I bread and bake the cauliflower rather than frying it to save a bit on the calories, and I serve over chopped cabbage to get some extra crunch in there. Tastes great and absolutely a comfort food.

Baked okra - I absolutely LOVE fried okra, but I don't like to fry things too much, so this was a nice alternative for me. Baking it with tomatoes takes out all of that slime, and this ends up tasting almost the same as fried. One caution - it doesn't reheat very well, so plan on eating what you make.
