November is a big month for The Vegan Society. The first World Vegan Day was created to mark the 50th anniversary of the society, held on 1 November 1994. This was later extended to become World Vegan Week and, as we now know it, World Vegan Month. Every November, World Vegan Month is celebrated around the world as a time to shine a light on the vegan movement. Veganism is a philosophy and way of living which seeks to exclude - as far as is possible and practicable - all forms of exploitation of, and cruelty to, animals for food, clothing or any other purpose; and by extension, promotes the development and use of animal-free alternatives for the benefit of animals, humans and the environment. In dietary terms it denotes the practice of dispensing with all products derived wholly or partly from animals."

I’ve been vegan for 5 years, and I cannot even imagine a life without veganism.
My favorite dish is one my boyfriend make. It’s a vegan mac and “cheese” made with pumpkin purée mixed with veggies. So delicious!

Butternut squash and sweet potato and carrot. Roast them, 450 maybe 30 minutes think like 1 inch cubes or so. Coat pan with oil coat with salt, pepper, garlic and onion powder, w/e else you like, perhaps herbs de provence, chili powder, hot peppers, Fresno would be great
Combine: heat oil over medium to medium high add garlic(2 large clove), onion(medium quarter), caramelize
Ideas: Basil, thyme, lemon pepper, a can if black beans or kidney or garbanzo etc, sweet corn, tomatoes/chilies, peppers, mints, ginger, various spices into a pot. Add the roasted squash and carrots and yams after whatever else you cook with the aromatics. Ideally should be chunky! Salt to taste. Scale to desire.
Vegan chili. Bon appetite! Eat with fresh cinnamon rolls with for maximum smiles!

I like stir fry veggies with a tahini sauce with tofu for a good protein source.
