How do I subscribe to a whole thematic forum to see new threads in it? I only have the option to select a particular thread.

Currently, I don't believe you can do that. You can only subscribe to a sub community or one particular thread!

@Monue It's not an option at the moment. You can use the sorting option to list all the threads in a subsection by the newest ones though.
If you like the option to subscribe to a section you can add it to the suggestion box.
