Foods and Meals For Prediabetes

I have prediabetes, and depression is contributing to my awful diet.

So I’m here to ask…

Does anyone have ideas for good foods or meals for people who have prediabetes? I forgot how to eat healthy…

I have a general idea of what a diabetes-friendly meal looks like, but not specifics. Has a medical professional given any advice?

Sometimes I like to flip through a cookbook or recipe site and many give macros if you have been suggested anything like that to guide you.

I also think many meals can be adjusted, and that's often easier. Spaghetti squash instead of pasta (or a mix). Lentils or cauliflower rice instead of rice, or again mix. Burgers? Use a lettuce wrap or there's lower-carb bun/bun substitutes and add a salad. My dinner today wasn't the best - Mexican leftovers from my husband's lunch out. I think an empanada? I had a jar of pickled cabbage so added that as a side to add some vegetables, plus add a bit more food in general. Later wen I was hungry I had some mini cucumbers 

An easy dinner idea I like is egg roll in a bowl. It's a cabbage-based stir-fry that mimics the stuffing of an eggroll. I use a bagged slaw mix to cut down on prep, but you can also buy a head of cabbage instead. Add whatever vegetables you like for me it's typically add waterchestnurmts, baby corn and peas. I have meat in mine - cut chicken, pork or beef in strips. Cook with rice vinegar, ginger, garlic, soy sauce. I like to add some plumb sauce, the portion is something to watch as the sugary sauces can add up. Some people like a spicy sauce instead.

I don't know if it's for prediabetes or not, but I like Greek yogurt or low-fat cottage cheese with either blueberries, strawberries, or raspberries. A baked sweet potato with coconut oil and cinnamon is really good. Salads are always good as long as you use a healthier version of dressing. I usually like balsamic vinegrette. I love Dave's seed bread and sometimes have veggie burgers on it. Fruit salad is always good. I like veggie stir fry that I make with rice. Also fried rice. These are just some meals that I eat normally. They don't tend to have a lot of sugar. Certainly not added sugar, so I think they are probably prediabetes friendly. I am not positive though. Someone else might be able to tell you better.

Avocado, strawberries, blueberries, raspberries , brown rice, brown bread, steel cut-oats, eggs, Greek yoghurt, Grilled Chicken, Eggs, Chia seeds, Walnuts or Almonds, Spinach, Broccolli .

Grilled Chicken + Brown Rice + Broccoli + Avocado — why it's works? - The avocado's healthy fats and broccoli's fiber "wrap" around the rice, slowing down its sugar release.

Brown bread (1-2 slices) toasted, topped with mashed Avocado and 2 Eggs (boiled or poached) — why it works? - Combining healthy fats (avocado) and protein (eggs) significantly lowers the glycemic index of the bread.

Greek yogurt with Strawberries and a few Almonds. — why it works? - High protein and antioxidants without the sugar spike of processed snacks.

Grilled Chicken, a small portion of Brown rice, and a large pile of steamed Broccoli and sautéed Spinach. — why it works? - The "Fiber-First" approach: Eat the broccoli and spinach first to create a fiber "filter" in your gut before the rice hits.

Quick Tip: The "Hydration" Factor

With all this extra fiber (Chia, Oats, Broccoli, Brown Rice), make sure you are drinking plenty of water. Fiber needs water to move through your system effectively and keep your metabolism running smooth.

Overnight oats made with nonfat milk and nonfat Greek yogurt is a great breakfast or lunch option and it's very customizable by adding different fruits (my favorites are berries; blueberries in particular) and spices (such as cinnamon, cardamom, ginger, pumpkin pie spice). It can also be made with Chia seeds added for Omega 3's and some crunch. 

Chia seed pudding is another great option for breakfast or a snack.
