Prepared the right way ... 🥘
My parents were pretty good cooks but there was a period of time where it seemed like the common way to prepare vegetables was to boil them until mushy so preparation methods weren't always the best. I have found there are foods I thought I didn't care for can be made delicious!
Hopefully we can discover some new recipes for healthy foods here!
Asparagus is take it or leave it when steamed/boiled until soft. Airfried so it's still crisp with a spritz of oil and a sprinkling of salt is delicious.
Boiled corn on the cob is pretty good, but who wants a hot kitchen in the summer when it's in season? I much prefer it done on the grill, rolled in oil, garlic and lime juice, wrapped in foil with the edges just starting to become blackened.
Shake n bake pork chops had to be slathered in apple sauce to get down. There are much nicer cuts of pork that are lean now - my parents aren't to blame here, grocery stores have just increased pork options since I was a kid. Tenderloin, marinated using any of the steak marinades I like is great (and these days much cheaper than steak plus it is lower in fat than most beef steak cuts).
@AffyAvo air frying is the new go to for me. So many things can be cooked this way.
I remember the veg cooked at a rolling boil till the whole house smelt. But the cooking water was often used for gravy thickened up so all the water soluble vitamins were saved. Not that anyone knew that at the time lol.
What about crispy kale?
Stir fried Brussel sprouts with garlic?
Beetroot air fried into crisp slices?
What about others?

Kale, my mom doesn't like so it just wasn't around but kale is one of the few leafy greens I can eat a big bowlful that I like and doesn't cause me problems. I also like kale chips!
Love brussel sprouts prepared well! Roasted or airfried are both things we commonly do. Cooked with bacon is also delicious but I find if cooking on the stove they need to be cut in half at the very least, so more effort.
I haven't had beets prepared in a way I didn't like!
