Eureka Moments

I am always trying to find new recipes for baking healthy bread. Recently I was experimenting with homemade cassava flour and was wondering why the bread was not fluffy as usually when I mix whole wheat flour with spelt and chickpea flour. After a while (I was doing something totally different) I realized that cassava flour is gluten free so it can't rise as whole wheat would do. I intent to keep on using it since it is gluten free and much easier on our digestion and as an older person that is something to look at in my view (when aging the muscles in the digestive tract can become stiffer, weaker, and less efficient).
