Traditional semolina couscous is made from just two ingredients: durum wheat semolina and salted water.
The Process (Hand-Rolling)
Moistening: Semolina flour is placed in a large bowl and lightly sprinkled with salted water.
Rolling (The "Fetal"): Using the palms of the hands, the flour is rubbed in circular motions to form tiny, separate granules.
Sieving: The granules are passed through different sieves (traditional screens) to ensure they are all the same size and to remove any excess dry flour.
Steaming: The grains are then steamed in a "Kesskes" (steamer pot) over a boiling broth to absorb flavor and soften.
@AReineRose Sounds delcious!! 💖💖💖 Always something new to learn ✨One question is this couscous different from the ones you share above?
It is basically the same but the spices differ according to what you will cook with like chicken, lamb, fish....
@AReineRose ooooh nice! 💖💖💖 so only spices differ with the meat you are cooking right 😃
@AReineRose I like couscous. I always just buy prepackaged stuff.
@AffyAvo Wowww!! ✨💖 I guess it's only me now who hasn't tried couscous yet. 😮😄
The country's traditional dish, like the way governments will declare the regional flower, animal, etc?
If so, I doubt such a thing exists as Canada has different geological areas. So while salmon might be a traditional food for one area, it's not found in others. Even something Canada is known for - maple syrup. The species of maple tree isn't really found where I live, although there are Manitoba maples, birch syrup would be more commonly eaten here in the past.
Now? I think Canada's food is best known for being international, with local influences. Bannock and fry bread? While often viewed as traditional to various First Nations has connections to soda bread from Scottish immigrants. There are also more recent foods, often with those international influences tied to a city or region. Edmonton's green onion cakes, Calgary's ginger beef, Halifax's donair, Quebec's poutine.
Which is your favorite among them ?
@AReineRose I like the diversity of food! I'm Ukrainian-Canadian (plus some Western European) so pyrohy are definitely nostalgic, especially during this time of year, along with other Ukrainian food.
I live a bit further north than 53 degrees, so am able to see Northern lights. I'm in a major city though, some of the provincial parks a little drive away get busy when Northern lights are predicted as people try to get away from light pollution for a better view. I've never done that. I have a close relative in a semi-rural area, she gets great views. Hopefully I'll be there sometime when they are out!
It's nice that you live in Canada, I would love to visit it one day Insha'Allah. It has such a fascinating natural beauty like in the city Vancouver and also the Niagara waterfalls. My relatives live there by the way in Québec.
Am from Nigeria and here we have varieties.
However my traditional dish is called ofe Owerri
ofe Owerri is a classic delicacy from the Igbo people of Owerri, in southeastern Nigeria. It’s a rich, flavorful soup usually made with assorted meats, fish, and a mix of leafy vegetables like ugu (fluted pumpkin leaves) and sometimes okazi leaves. The thick, hearty texture comes from a combination of cocoyam paste or achi as a thickener.
Ofe Owerri is often enjoyed with fufu, pounded yam, or semovita, making it a centerpiece at festive occasions, family gatherings, and celebrations. What makes it stand out is the depth of flavor savory, slightly smoky, and very aromatic thanks to the mix of meats, stockfish, crayfish, and palm oil..
@AReineRose
Where I am from we make hotdish. It's a meat, some vegetables, a starch, and some kind of sauce or creamy soup to bind it all together. You put it into a baking dish and bake it in the oven. It was meant to feed large groups of people at church suppers. When you asked what you could bring, they would tell you either a "hot dish" or a "cold dish". We also bring them over to people when they might be going through something and don't have time to cook. My favorite is just ground beef with macaroni pasta, tomato sauce, carrots, onions, and celery with cheese on top. We eat it with cinnamon and sugar toasts made in the oven.
@TovaCares76 I'm guessing you're from the area with salads that aren't really salads.

I certainly remember those types of salads, as I think they were more widespread in the past. I haven't seen one in real life since I was a kid.
@AffyAvo
I've seen her videos! I love that woman. She has my accent. :) Yes, that's where I'm from. My favorite is orange salad. It's orange jello-o, banana pudding, mandarin oranges, crushed pineapple and whipped cream (cool-whip if you've got it!). Delicious.
@TovaCares76 Maybe I'll give my nephews a taste of the 80s one day. I don't even know how much my sister would remember.
Walaikum assalam 🎀 habibi
