I guess I've only had Ethiopian, and another kind that's popular around Egypt. The latter, I didn't get to try much of, but it was kinda like Mediterranean/Middle Eastern. As for Ethiopian, I just remember all these meats and veggies, sauce, and whatever else was put out in front of everyone in a circle, and you're supposed to use these tortilla things to get whatever you want on it, and you eat just with your hands. Also the tortilla bread took a minute to get used to because it was kind of sour (it's supposed to be). Overall, it was one of the best meals I've had.
